Honestly? Nothing. Hidan's immortality apparently isn't a chakra based technique, therefore disabling his chakra points and damaging his internal organs wouldn't be enough to stop him. As far as I'm concerned Neji has no way to decapitate him or sever his limbs, so Hidan wins. ​

By that logic his immortality is nigh useless.
He already pierced his leg deeply, got two wide swords driven slightly below his chest area, got blown away by Kakuzu's Futon, etc... and was moving just fine after all that. Hell, he was talking after getting decapitated. Don't nobody can talk with no troat ._.
If it doesn't dismember or erases his body, he doesn't care. Its not like he moves just thanks to his muscles and bones, there's a bigger force behind that.

Taijutsu based techniques aren't damaging Hidan unless he has a way to cut him to pieces or something, which is unlikely. He'd outlast Neji in the end.

This is a bad match-up, Neji is overall superior, but Hidan still wins.

Can't gentle fist paralyse the victim? if so Neji will eventually take Hidan down by fully shutting off his ability to move and then cutting his head off with his own scythe or a kunai.

i say Neji takes this high difficulty. Hidan did manage to keep Asuma at bay with his scythe despite having to dodge Shikamaru's shadows at the same time so it will be hard for Neji to approach but with the ability to expel chakra at a moment's notice, Byakugan perception and vacuum palm to blow Hidan off his feat, Neji has the tools to get close and start closing chakra points.

Neji Gentle fist will disable his immortality technique. Hidans Technique is chakra related. There is always something connecting the dots with a technique and in most cases its chakra. Action at a distance with nothing to connect the dots is magic and that just doesn't exist in the NV ( even gods SO6P/Kaguya uses chakra to do stuff) so yes, his technique is chakra related and I believe Neji blocking off his chakra points will disable him from using it. Neji wins by slapping a few paper bombs on him from his ninja bag and blows him up, incapacitating him, and therefore winning the fight.

I don't know. The way Hidan's use his Scythe is unorthodox. Neji can counter the attacks head on, but the DB3 if I recall said it can split up and carry various functions. That would give Neji the surprise hit and he's unfortunately done for.

I admit this is a good catch, the databook says nothing about it, but let's be realistic here, nothing suggests he can use the scalpels on Kabuto's level who is a medical genius.

Neji does not have to be a medical genius. He is a genius of the Hyuga Clan, a clan that specializes in taijutsu and have knowledge on all parts of the human body and its weak joints (which they can actually see). A clan who's main fighting style is surgically severing internal organs and chakra points with small needle like chakra from their finger tips invisible to the naked eye at such a fast pace that it looks like all the hits land at the same time and that requires utmost taijutsu knowledge, speed, precision, and accuracy to preform. Kabuto has admitted he is not good at taijutsu therefore, Neji most likely possesses higher skill than him with their "chakra scalples".

For a Byakugan User it is child's play! He would literally know it could possibly Detach or hidan have hidan weapons be fore hidan would detach or bring out any hidden weapon! You cannot hide anything in front of a byakugan user! Then with Rotation (being the only know defense fans like you and most the sight knows) will make hidan look stupid every time. I'm not even going to mention the other abilities. haha
