How can kakashi win facing off against multiple enemies? People act like kamuing someone instantly incapacitates them.

If kakashi kamuis one or two enemies while there's other enemies still in play, Kakashi can't go intangible again becuase the warped others can attack Kakashi's self that exists within kamui.

That applies only on guantlet that has Edo ,as kakashi can just warp alive people's head
In case of Edo fights ,either he has sealing jutsu or he will just need to warp their whole body to the other dimension but then using intangibility would be risky and dangerous however Ithink he can beat the rest without relying on the intangibility
