The manga is more canon and has depicted it only as yellow so, I think that's the right one.

Yes and? The anime has the same susanoo in your scan as yellow- the full bodied susanoo (whatever name it is)

Edit: If you can find a color version of the one against Sasuke that would help also.

I'm thinking White, to represent Konoha's White Fang, a hero in the eyes of both these people, and one of the few things that connected the two

Viz have Itachi's susano'o goldish orange Madara's like dark blue and Sasuke's navy blue Kakashi's would probably be grey
