At least with Roshi, we saw his unconscious body being picked up by Kisame, who complimented Roshi as a tough battle.

Fu, Utakata, and Han, however, weren't seen in the manga until the Jinchuuriki paths.

I didn't remember this, makes me feel bad for fu, they pretty much betrayed her but that village was probably too weak so they had no choice. I wonder why kishi never thought of giving us back stories about the other villages, would've been much better than "uchiha this, uchiha that" that we got in part 2.

No, I'm pretty sure Utakata got a whole arc devoted to him and meeting with Naruto. And they even showed the full battle that led up to his capture by Pain

Not really. Takigakure was a minor village, and probably wouldn't take the risk to train Fu/go against Akatsuki. She was probably willingly handed over to them.
