Edo tensei explosions are only possible when he is edo himself and in most of the cases Edo tensei is restricted due to the requirements.
It isn't like Kamui can't be countered, there are various means to get rid of Kamui, one of them is making your opponent spam kamui and make him lose his chakra, something which is highly possible in Itachi's case considering the fact that he has wide arsenal except Susano'o techs and is completely feasible in case of someone like Kakashi(he has habit of spamming kamui,btw).
Obito is debatable though and really difficult opponent, because he has better chakra and is overall better than Kakashi when it comes to Kamui and hence may give better fight.
