Is it? Because 50-ish+ Jiraiya, Tsunade and Orochimaru seem a lot stronger and more versatile than when they battled Hanzo, which was in their "prime", wasn't it?

Prime is subjective and subject to general relativity.

What you see as someones prime doesn't have to mean it is their prime.

I see a shinobi in their prime as the point in their life where they're strongest, regardless of age.

That makes more sense if you look at it that way. Prime isn't an age but their strongest.
