To answer the question of why many but not all anime lack in racial diversity is because historically Japan has been wary of foreigners. Though that may sound extreme, many of Japan's norms reflect this. For example, most younger Japanese people prefer and are encourage to marry someone within the Japanese nationality. Another point is unlike the US (or at least it used to be) where immigrants and tourists are welcomed. Japan has an overall wariness of foreigners and tend to avoid such matters. This why we don't get the manga or anime sooner in a legal fashion, the Japanese follow their own model they set up, not foreigners. This is also why Japan's wariness of foreigner has led to the future drop of their population due to death rates surpassing birth rates. So this is why anime is not as diverse, because its original target demographic are close-minded people who as of now are slow to change.

Do not let the name fool you. The very start of episode 1 gives you a beautiful story that immediately shows Japanese-American racial diversity at its most dramatic.

Literally one of the best series ever made.

Racial diversity does exist in anime, but in terms of it being rare, they're probably not as familiar with other races (and everyone's familiar with Caucasians), so maybe they avoid it in case they portray them in an offensive way without meaning to.

Also, more familiar = easier to imagine = easier to draw... among other reasons I can think of.

Besides, Asians in Hollywood are more rare than other races being in anime. It's the same in American movies - there are more Caucasians and/or Blacks in them than Asians.

Bruh... did you really just say that most anime characters are caucasian? I will admit, a lot of characters have Caucasian-ish features (brown, blonde hair, blue eyes, etc.) but most of them are Japanese. When I was really young, my family and I went to Disneyland and we came across some Japanese tourists who were so fascinated with my then-blonde hair (it's brown now, hahah) that they had to touch it. Also, you see a lot of non-natural hair colors in anime too, like pink and blue. Japan (not saying everyone over there, but a lot of people) is fascinated with different hair colors besides black, which is the most common natural hair color in their nation (and in the whole world in general). In terms of skin color, Caucasians and many east Asians are pretty similar.

My main argument towards anyone complaining about diversity in media is go create something yourself instead of expecting others to create what you want to see for you.

Watch attack on titan, or naruto xD or baccano, or bleach, or one piece, or fate/zero most animes do have racial diversity, others just have it set in japan, you just need to watch more anime

I think you're stereotyping Asians to a specific look. You need to look at a few details, Asia is a wide area with many diverse ethnicities and skin tones ranging from Russian to Philipino to Indian. Now look at the names CaucASIAN and Asian. There is a theory that the native population of the Americas were descendants of Chinese(predominantly) and Asian descent. Which would make our skin tones not that different than theirs. Obviously in anime you won't get the stereotypical, bigoted tiny eye as they're more cartoonish and why would Japanese artists want to depict their characters in a negative stereotype?
