While Gaara is using his sand technique's Katsuyu can shoot acid and thus dissolve any sand technique which will put Gaara at a disadvantage, considering the fact the battlefield will be all muddy, Gaara won't be able to use any Sand simply due to it being to heavy.

It depends. Sadly GeneralOuki didn't give us the maximum distance of the fight, if it's around 15 she could
ride Katsuyu, If gaara would attack from above he could katsuyu can counter it with acid, Sakura can than jump
or throw a Kunai to get Gaara down.
