He'd have to wait a pretty long time. He doesn't have Doton: Hiding like a Mole and I'm pretty sure the air pressure released from Hirudora would find it's in way into the hole created by Hiding like a Mole anyway.

No he can't, just like how Kakashi does not have chidori nagashi or Zabuza does not have great shark bullet.
Neji sees him anyway. Kakuzu at underground can't fight himself, so Team Gai would not bother to waste energy for him.

Hirudora has large AoE, it can kill multple hearts at once.

as we could see against kakashi his beasts were all over the place... like 360° and extremely fast... both in speed and high jutstu release.

They have no speed feats. 360 degrees are useless as Neji can alert others with his byakugan, and different hearts haven't shown to attack at the same time while seperated.
Hearts do not have speed feats to dodge Jutsu like Asakujau or Hirudora which are executed fastly as gates give people higher speed.

Team Gai has nothing besides Neji's gentle fist that can put Kakuzu down and they literally have nothing on Hidan's immortality.
The zombie duo will eventually earn the victory.
