Hidan canonically has the slowest attack speed in Akatsuki, whereas Guy in base was able to engage Kisame (who fought Bee in physical combat) and Obito (who can react to KCM Naruto) in physical combat. There is no situation I can imagine where he will be able to hit Guy, lick his blood, stab himself to let out his blood, use that to draw his circle and then stab himself before Guy does something about it, unless Guy stands still whilst Hidan does all of that for some reason. Then there's the fact that Hidan's immortality does not provide him with regeneration, therefore Guy could just break all of Hidan's limbs with his boulder-shattering nunchucks and stab a kunai in his brain. Guy does not need the Gates to win this.
