Zabuza isn't stupid. He will notice Hinata's eyes and realize that she is from the Hyuga, and that she has Byakugan. He will not use the mist jutsu because it will be ineffective to begin with. Although Hinata has her Twin Lion Fists, she is still inferior when it comes to taijutsu. Zabuza has a 4.5 while Hinata has a 3.5.
That attack it's too linear. Zabuza has better strength, more ninjutsu, and better speed. He also has his sword which can block from Hinatas attacks. Hinata's only chance would be to best him in CQC and hit his chakra network, but that will not happen because even Kakashi couldn't handle this easily. Zabuza has water clones that could deceive Hinata and he could strike her easily.

I also think Hinata lacks speed despite being a Hyuga. She hasn't really shown anything impressive that I'm aware of. zabuza is not particularly fast either, read the opening, both have no intel one each other
imagine this: zabuza uses mist, zabuza tries to sneak behind and cut her in half, hinata sees him because 360 vision, hinata ducks, hinata uses gentle fist on him
or this: hinata uses air palm, zabuza loses his balance and is sent fliyng backward, hinata uses 64 palms

I am kind and sincere to people who deserve, but more outspoken unlike Hinata.
I don't want to be an incarnation of a submissive shy girl fantasy who is devoted to sucking up to a man. And i am okay with my chest size; hence i would never want uncomfortably exaggerated humongous things Hinata has.

Like I stated before, Hinata cannot keep up with Zabuza who has shown better taijutsu and speed feats In his battle with Kakashi. He has far far far far far superior strength and could easily kick her into tomorrow.
