Itachi is not even in their level, so how would he last against someone who's stronger than them?

He has nothing to bypass Sussano, his 7th gate can only last for so long until he suffers from the side effects of it.

He just got back up from using the 7th Gate and went straight into the 8th. Damage done to Itachi's Susanoo over time followed up by Morning Peacock and Daytime Tiger should bypass Susanoo. Not to mention the fact that he could barely stand before he used the 7th Gate against Madara and he's constantly been using Gates in the war, so I'm pretty sure he'd be able to maintain Gates well after Itachi succumbs to his poor stamina and his disease.

Hell no. Gai came at Madara extremely linear; all Itachi needs to do in that scenario is throw up his susano'o and then place Gai under genjutsu. And for the record, Gai's tactic while fighting uchiha won't grant him any immunity to Itachi's genjutsu, as eye contact isn't required.

Except that Gai isn't going to go straight off into 7G, not after seeing Itachi's Complete Susanoo. It's illogical. He can easily wait out Itachi in 6G (6 Gates) and Itachi would have to keep his Susanoo up, otherwise he falls to a blitz followed up by Morning Peacock. Gai can maintain 6G for far, far longer than Itachi can maintain his Susanoo and while he's in 6G, he easily avoids anything Itachi throws at him. After a few minutes, Itachi's Susanoo goes down in stages due to his poor stamina, allowing Gai to go one-up in Gates and destroying Itachi with Hirudora.

Actually, it seemed more like Gai was on the ground due to this

As you can see Madara is also pushed backwards and Gai is on the ground covered in smoke so it doesn't really mean it was due to exhaustion

In this war Gai has constantly been fighting using his gates repeatedly...Both of them would be fresh for this battle so if anyone is going to tire put first, it's going to be Itachi due to him having a lower stamina than Gai

Not really, with his sharigan he will know Gai is activating his gates and prepare by either using sussano or utilizing his fast hand seal speed by making crow clones or exploding kage bushins which Gai won't be able to keep up with may foolishy attack one and end up damaging himself.

Itachi can also blind Gai's vision momentarily by the using of summonings crows to his aid[

]. With the confusion of crows everywhere and also the potential possibility of Gai himself hitting a exploding kage bushins gives itachi all the more means to exploit this situation by coming up with a strategy to end Gai.

You say while in 6g Gai evades everything but that obviously isnt the case since amaterasu is still a factor, Does Gai even have the reaction time to react to amaterasu? Gai doesnt have v2 Ay reaction time, that's fact. Is 6 gates speed the same as v2? Most likely not.

While performing morning peacock or hirudora Gai leaves himself open to a Amaterasu which he won't react to.
