Itachi intentionally baited Kabuto by standing there saying he will activate Izanami.

Itachi ran from Jiraiya to save the lives of Sasuke Naruto Jiraiya Kisame and Kurama all at once. He escaped using a jutsu (Amateratsu) that would've killed Jiraiya if he attempted use it on him.

He didn't wanna over use his eyes before his death match with Sasuke.

Itachi was also afraid of Obito as he failed to kill him along with his clan. Black Zetsu (Madara's will) called Itachi practically invincible since he had the spiritual weapons.
