It wasn't that simple though, There was a possibly time limit on when her seal would fill itself up, she knew that Orochimaru would try to steal Sasuke's body in 3 years, so she probably calculated the amount of chakra she would store daily in order to have her seal filled up in 3 years,...during the time when Orochimaru will have regain enough power to steal Sasuke's body, also given that she needed to travel she probably was a few day early of the time he would have enought power, seeing as how she need to travel and locate them. Also this would explain alot, you need the seal to summon Katsuyu and we know that Katsuyu get her power from the seal, and she is one of Orochiamru's weakness,as the Frogs are Tsunades, and The snakes are jirayahs....We've seen how Tsunade handled part one Orochimaru but they both were handicapped, she was restless (handn't slept in 6 days,) drunk, and rusty. But Sakura would've been training, and learning more and more to overpower him, which is why she has something up her sleeve, she said that she wasn't only training but gains info from Tsunade's (the Hokages) documents, so at this point, its no telling what she can do. And we know that she learn things instantly, due to her chakra control.

Its a seal, it is not that simple, in order to complete it one has to has X amount of chakra inside of it (evident when Sakura said she finally filled hers up.

You must have enough chakra in there seeing as how katsuyu gets her power from the seal, and it take a hell of a lot of chakra to summon a beast, especially Katsuyu
Tsunade said it took her a few years to fill hers up..she Uzumaki and Senju, she descends from power chakra and large reserves.

Sakura said herself in the pain arc that she couldn't keep healing all of these people, I forgot what chapter the scan was in but she said it.

3 years hadnt passed sense them though, she hadn't calculated the possibility of Sasuke going evil, she was too blinded by faith to do so, they way he left things, didn't help her to realize this either, she hadn't gave up hope. And by time that happened she was already storing her seal.
