Amataratsu:
Amataratsu is one of the strongest MS techniques in Itachi's aresenal, the user focuses on a target and build up chakra in their eye, to release a black flame that spawns on the target. Now, Orochimaru has a of countering this technique. This would be his Oral rebirth

This technique allows Orochimaru to create a completely new body, and exit the mouth or the stomach to either heal, or evade dangerous techniques. Even though it's considered "chakra taxing" a sick Orochimaru has shown the capability to use this technique four times in a weakened state.
Genjutsu:
We're all aware Itachi's genjutsu capabilities which stomped Orochimaru before, but now he has knowledge on how to nulify/ counter it. Orochimaru can simply close his eyes, and use a form of snake sensory to pinpoint Itachi's location

Susano'o:
Susano'o is the ultimate form of defense, and offense. It encases the user into a being manifested by Chakra. Now Itachi's is special, it posses a weapon that's a big threat to Orochimaru; The Totsuka blade. The Totsuka blade is said to seal anything it pierces and traps them into an eternal illusion, inside a gourd. Now, Orochimaru can make his way around Susano'o by using Zetsu's know Mayfly technique. This technique allows Zetsu to merge with the ground, and go deep under to move around at high speeds, it's arguable if he can appear under the Susano'o and restrict him with HSH or pierce him with The Sword of Kusanagi.
These are counters for Itachi's arsenal; albeit not all of them but some. Now this is easier said than done, so Itachi still might be able to beat Orochimaru, but high difficulty.​
