OK its completely logical that minato can steal totsuka sword and yata mirror from Itachi.
First of all these two spiritual wepons were not Itachi's to begin with. these are wepons that were transfered from one people to another for a long time. orochimaru was looking for Totsuka but he didnt found it because Itachi possessed it.
that being said these wepons can be possessed by anybody and it dont need susanoo to hold it.
Now how can minato steal these weapons from itachi.
First of all minato needs to make a clone of himself. after a brief battle , itachi will summon susanoo. Then minato just needs to throw some marked kunai at itachi.
yes those kunai will bounce off Itachi's susanoo but those kunai's will be near the suanoo.
minato uses FTG and keeps bombarding FTG + Rashingan attack.
Itachi will have no choise , so he brings out Totsuka sword and yata mirror.
now minato"s clone will once again FTG and touches the the totsuka sword or yata mirror .
By doing so he will swipe the places just like he did against Obito to remove that black orb. similary in this scenerio minato will remove the yata mirror.
Now unlike susanoo which is pure chakra, yata mirror is a spiritual wepon with a singular existence. hence Itachi wont be able to summon that shield after it is lost. so Minato can then take that yata mirror and use it against itachi.
similary minato can use this same logic against totsuka sword too. this time minato needs to touch the gourd from which totsuka emerges. since susanoo is already tagged by minato hence minato's clone can easily FTG near susanoo at the right distance to touch the gourd and then again swap places and teleport that totsuka sword.
then minato can use that same totsuka sword and FTG itachi and then seals him with totsuka sword.
