The fight was still Canon, it doesn't have to be in the manga, it was right before he fought Sasuke and Kisame wanted to fight him before he died. I don't know if it's real or not cause I don't remember seeing it but if it really took place then it counts. An example is how the Manga shows clips of Kakashi group fighting the mist 7 swordmens but the anime shows more of what happens. Anime shows more of the manga to make the fights and story better or else fights wouldn't be as long or enjoyable. If it was a filler that had nothing to do with the canon then yes I would agree but this was still in the story line since it was before he fought Sasuke.

He was blocking attacks from base Gai, that's not something a slow person to do unless Gai's speed is lowly as well (which it isn't) plus he can move fast in water. Also he gets faster in waterdome when he fuses with samehada.
