As I mentioned before: if this is with no knowledge, then we go by what we've seen in the manga.

Itachi: when faced against anyone in the manga, he usually starts with genjutsu. It's his safest and best way of winning. He never wastes time, unless there's a specific purpose involved, which in this battle would not be the case.

Kakuzu: starts off in normal mode and wouldn't imagine to split immediately because he's got no knowledge on Itachi or what he could do. He faced strong opponents in the part (i.e. Hashirama), but most likely none/very few genjutsu experts.



And this is valid in all scenarios where you have Itachi vs someone. With no knowledge on each other and mindset "in character", Itachi almost always wins because his first move is genjutsu, while 95% of the shinobi usually start off slowly, getting into their rhythm, studying characters.

-Each heart is not Kakuzu's at all, but hearts that are stolen.

Wouldn't that technical be the "partner" that is able to break you out of Genjutsu, since it's technically not the "same person" getting you out?

It may very well be a possibility, but I still think that even if the hearts have their own "will", they are still somehow following Kakuzu's intentions. I mean they're clearly not individuals, but more like machines, designed to do complete a specific task input by the mainframe (kakuzu's brain) using whatever means at their disposal.

Whoever, I believe that since it's important for Kakuzu to want for the masks to split in order for them to leave his body, then at that moment (and before it), Kakuzu's brain is "the boss", giving all the orders. If it gets caught in a genjutsu, the whole system would crash, not just his main body...but this is of course only speculation. But I would be willing to listen to another version of how it would be possible for Kakuzu to escape.
