Itachi's eye appear to have lost its light after he used Izanami. Shouldn't the eye regenerate since he is an Edo, or is there any explanation for that not happening?

The eye was sealed...also Itachi chose to give up his eye....as to help Kabuto. He could have defeated him with an alternative.

Whether or not it could have regenerated Itachi was no longer bound in the impure world thus releasing him into the pure world. Itachi doesnt have any ties to the world anymore and wont be summoned back again. But to answer your question yes his eye would regenerate you answer lies in Madara. He died without his original eyes yet he came back with them.

LOL explain how. Itachi did it that way because it was the only option he had to force Obito to release the Edo Tensei, no other Genjutso would work as DSM Kabuto is immune to Ocular Genjutso.

Eye aren't living things, plus they weren't broken...

His eye wasn't broken, it was simply worthless.
Using Izanami or Izanagi has a cost. That cost is that the eye loses his light permanently.

On the other hand if Itachi was to be Edo'd again he should come back with both eyes, as Edo Tensei brings people back to how they were prior to their deaths.

Eyes are of course living things, and so is every other part of the human body.

Oh I see! The eyes get sealed just like an edo been sealed. Thanks. Though I doubt if Itachi could have defeated him any otherway.

Is there anyway to unseal the eye that loses its light through Izanagi/Izanami? I think the eye would still be sealed if he were to be edod again, just like the jutsu used on the Hokages.

Itachi says he chose this Jutsu because he wanted Kabuto to understand his shortcomings, correct? When Sasuke asked him "Why did you use this Jutsu"

Itachi chose this Jutsu specifically for Kabuto to help him. It's never once stated Izanami was a last resort, is it? Also...remember Itachi was holding back not trying to kill him. I could be wrong...did Itachi ever say that he has no choice but to use Izanami? I believe he chose Izanami just for Kabuto, but could have defeated him alternatively...just didn't want to kill him.
