Pekom's and Kaido are most likely of the same category (just as Bepo is as well): the breed of Minkmen.

I reckon Kaidou is has a ability similar to Mr 2. He can change into 100 beasts since he has touched them or something i dunno Lol

Some ideas for Kaido's officers and awesome match-ups...

Ancient Zoan: Sabertoothed Tiger
Dangerous carnivore with long sharp teeth and badass appearance. Perfect opponent for Zoro since his animal theme is also a tiger.

Kangaroo [ Since i'm aussie, i'd love to see this ]

The animal most associated with leg strength/kicking power. I think such an opponent would make a good zoan counterpart for Sanji.

Ancient Zoan: Mammoth
Most colossal mammal I can think of. Imagine a buffed-up, weaponized mammoth guy versus General Franky.

Hito Hito no Mi : Model Typhon.

The king and father of all mythical creatures in Greek mythology.
He would look like a Giant with a lower half made of snakes. Dragons arms and thousands of snakes on his hands. Typhon could create beasts at will. So I imagine if Kaidou is a Typhon man then he would be able to partially become other Zoan fruits e.g a part lion part Typhon or a part Ox part Typhon
