If I recall, hand seals are used to focus and mold chakra for a particular use. For example, a lot of Tiger hand seals are used for Katon techniques, whereas Doton regularly use the Snake seal.
It's all about how the chakra is molded through hand seals, which affect the jutsu's outcome.
I don't think it's been explained that well in the series, but that's my understanding of it anyway.

Actually can not properly remember, something to do with channeling & molding the chakra to do a specific Jutsu?

All Ninjas started out learning Hand seals to mold the chakra for jutsus it helps them concentrate. But their are High level Ninjas who for simple jutsus no longer need to use Hand Seals. Like Itachi only needing a finger movement to started a genjutsu.

i understand, but for decoration and reasons of drama, would it not be better to fully explain something to give it more depth and falvour?
So my understanding of the hand seals is the same as everyone; no one really understands how it works lol..

In the case of Itachi, eye contact is what is needed. That is why there are no hand signs. He still performs them for non-ocular techniques. Same goes for the "high level ninjas". Hasirama and Madara both use hand signs.
the hand signs are used to channel the chakra and mold it to that particular jutsu, after becoming extremely profiecient in that art then you would no longer need to use signs *this is very rare, not too many people have that kind of chakra control*

Mainly chakra control. You can give a route to chakra, you can give it shape, continuity, set a frequency for chakra, and anything that implies any kind of control over the chakra in the user.
The most basics in chakra control is the Ram/Goat seal, that let the user mold chakra for later uses (this seal induces an stimulae over the heart, the core organ for chakra production).
The main reason Naruto is considered one of the people with best chakra control in Narutoverse is that he is able to make the Rasengan, a A-level Jutsu that don't use hand seals to mantain potency and rotation of chakra.

Seal are one of the first subject at the Academy,ones you learn them next you learn in what combination they must be use to mold the chakra for the particular jutsu you are using.Iis the ABC Of Ninjutsu.
