Simple actually.

If i was to gauge id say a healthy itachi is the one that slaughtered his clan at that time as i believe he got this illness shortly after joining akatsuki as an official member.

Prime hiruzen has 0 feats and empty hype.
But at a glace id say he should be at least 2 tiers above old hiruzen, which is around sannin level or above.
Which case that should be enough to defeat a 12/13 year old itachi.

Besides counting enma, he should also be much younger and out of all the summons enma is the one that most interest me as i believe he is something special. He also in his prime and it gets ugly for a healthy itachi who should be around 12/13

totsuka and Yata aren't MS techniques they are special items that Itachi obtained AND no one knew he had them..... Besides what's the counter to a spiritual item that's shapeless formless and blocks all attacks? Or a sword that's shapeless and lengthens at will and seals you if your hit? Hiruzen is no where near fast enough to dodge totsuka

But I guess if we using "Prime Hiruzen" that knows "every jutsu in Konoha" and the "Strongest of all kage in his time"

As incorrect as it probably is, the hype of "Strongest Hokage" also includes Hashirama. There's no hype that can beat that. Unless you believe "Strongest Shinobi of his time" includes Hiruzen. Obviously feat-wise, Hashirama >>> Hiruzen at this point.

And if Hiruzen was in his prime, he'd have a perfect score in the databook, as well. Old Hiruzen had a perfect score save for the three things that can be affected by old age.

The fanbook is written by Kishimoto, it's just as canon as the databook or manga.

OT: Neither of these exists, by the logic of some of these members, but no doubt it'd be a close call.
