I was thinking the exact same thing, Juubi's influence has made his skin white, so honestly, his hair turning white wouldn't be much of a stretch.

Chakra depletion caused Nagato's hair to go snow white. And controlling the Juubi, or losing control to the Juubi, must have taken it's toll.
