The only ones are the jinchuriki that were sealed at birth or not long after. Its my belief that the chakra of the tailed beasts melds with theirs causing the traits and personality differences while others who are jinchurikis later are still themselves. This explains gaaras psychopathic personality and naruto's trouble making as a young child.

Maybe Bee is an exception. He became a Jinchuriki when he was already a young teenager yet still shares a similarity to the Hachibi (Hachibi has those round eyes where Bee has always worn those round shades, even when he was young).
