7 Samurai
Afro Samurai
Baccano!(one of the most unknown(on here) and under appreciated animes)
Hetalia(WW2 inspired personification comedy, I found it pretty funny but I love history)
Desert Punk
Sengoku Basara(based off Samurai Warriors video game but much more action and liberty taken with characters, awesome fight scenes, Masamune Date will wreck 80% of any manga single handedly(and 6 sword-idly?))
Zoids(old school)
Basalisk
Shiguri death frenzy(samurai battle between 1 armed swordsman and Zatoichi, blind swordsman)
Baki the grappler
GetBackers
Bamboo Blade

A lot of these can be found on Netflix that's how I found them so you may have already seen some or most of these.

Oh there's also One Outs I guess. It's sports-themed (baseball) but focuses on somebody who simply outsmarts his enemy to take the win in the big leagues. I've only experienced the manga portion but the anime shouldn't be any different I guess. Even have a review for it:
