What would happen if Itachi just Tostuka Bladed the ground?

Kind of. The ground is dirt and stone, more or less. A lot of natural stuff in Narutoverse is dirt since it's not like they use highways and cement, especially the way the environment is.

By hype, he would seal the earth. In reality, i have no idea. Technically his sword is always piercing the universe, however the universe is not sealed, so it's impossible to say where the hype fails in regards to a spiritual weapon.

I believe it depends on the wielders intent. Totsuka was able to slice the heads of orochimaru's Summon During the battle with Sasuke and not seal them, But then Sealed Oro moments later. So I think it depends on if he Wants to seal said object.

Could he Seal the ground? It's plausible. Although, how much he is able to seal would probably depend on his Chakra reserves.
