He did that intentionally. Sasori is as fast, or faster than Itachi, have much much better stamina and his intelligence is stronger than we think. Itachi cannot stay in Susanoo for a long time, and in that time Sasori can simple play with the iron sand and make Itachi lose it and stab him.
