Yata mirror won't help against sound or else Itachi won't be able to hear what anyone is saying. It also means that no sound can get into his susanoo so Itachi won't be able to tell what is about to happen if it isn't within his field of vision.

If Yata mirror can block sound waves, Kabuto can still win by immobilizing Itachi's susanoo or at least slowing it down with Kidomaru's webs. This will force Itachi to withdraw susanoo in which case he'll get killed pretty quickly through muki tensei or whatever Kabuto feels like using. White rage will force Itachi to utilize a lower level of susanoo and since alive Itachi is sick, he probably won't even be able to utilize it while under the effects of white rage. If all else fails, Kabuto simply outlasts him.

Kabuto wins mid-high difficulty.

Kabuto having horns or not means nothing, fact still stands itachi was still able to get into kabutos radius/range and he dealt a fatal blow to him which in this case itachi is going for kill now, added to the fact that kabuto even saids itachi can read peoples intentions and use them to his advantage for battle.

even with his sensing abilities kabuto is still prone to attacks so my smoke shield from itachis explosive clone still stands.

I already discussed kidomarus webs.. they easily get cut with totsuka blade or simply itachi can deactivate his sussano.

In the fight it shows itachi reacting in time to muki tensei but he decides to save sasuke instead.
