Minto's speed is not anything to be scoffed at.

He is wrong as hell. It was stated that the sharingan was ineffective against the raikage in v2.
Madara had to grab him and hold him still to use genjutsu on him. Great speed>sharingan. Lee, the raikage and minato proved that already.

To prove my point of minato's superiority in such a match, FTG, and to hopefully wina fight against minato, itachi has to activate susanoo, which he then will use totsuka blade, then minato will open a barrier, send the blade onto itachi's back, and seal him.

Let me tell YOU something

1: Match Starts

2: Minato looks at Itachi (Obviosly)

3: Minato throws his special Kunai

4: Itachi puts him in Tsukuyomi

5: Itachi seals him with Totsuka blade

2. Totsuka blade is hardly useful against Minato. Minato can simply shunshin away, like any ninja with the moniker, "Fast as shit."

I don't think minato became any better than the alive minato and i think that the fight can go either way depending on the circumstances. He just got enhanced abilities such as speed, reflexes, chakra, and sensing. He became faster, got better reflexes, more chakra, and he is now able to sense negative chakra or energy. It would be a draw because if minato was to fight itachi, minato would just teleport to another location to avoid getting hit by susanoo and the totsuka blade until both get out of chakra. On the other hand if itachi uses izanami, it is all over. It can go either way though...
