Lee already has his own spin-off, and I find it more enjoyable to watch than Shippuden in a lot of ways.

I'd personally be more interested in seeing stories we haven't seen before. It's cliche, but I hope they do a one-off (or short series) with the next generation of ninja (or whatever the future equivalent is.) Y'know, in the vein of how the Legend of Korra involves the world the main characters of Avatar created.

Edit: Jiraiya would also be pretty great. It would be really weird to see him and Orochimaru working together~
