Itachi had assistance from Sasuke and Edo body on his side. Not to mention Kabuto did not have any of his edo's at hand because if he would have pulled any from the battle field that could have damaged his sides chance of victory.

yes he would but to be fair, Kabuto got a huge powerup from Orochimaru's 'leftovers' so take away edo form from Itachi and Orochimaru-enhanced powers away from Kabuto.....
