Itachi isn't really THAT strong, he gets a lot of plot power and fanhype. He has been stated to be below Tobi and around Jiraiya. Which makes sense, if Itachi were any more powerful than that then he could had stopped Akatsuki himself since he was a good guy, but he couldn't. What you're doing is falling for the hyperboles and no-limit fallacies.
Tsukiyomi: It doesn't kill, remember, it causes mental strain. Kakashi surprised them by having enough fortitude to resist it, and Sasuke managed to break it using his fortitude. That is the key to beating Tsukiyomi. Also, Itachi can only use it if you stare directly into his eyes, which can be avoided.
Amaterasu: It does not work like a magnifying glass on an ant, it's a fireball that can be avoided. Sasuke avoided it, Gyuuki reacted to it, Ei dodged it. It also takes a little time to prep which gives off warnings, and burns rather slowly. These give options to counter it. It's most feared aspects seem to be the user's ability to control it's trajectory and the inability to extinguish it my normal means.
Susanoo: It's defense is ambiguous, isn't that fast, it's physically weaker than a boss summon, and drains the user's life-force and attacks their body during use. It's still all-around a great ability for offense, defense, and support, but it's far from perfect... hell, think of it like a summon. It also doesn't protect the user from underneath, doesn't protect from certain forms of attacks, and slows the user down.
Totsuka: It's sealing is overrated. You know what happens when a normal giant sword pierces you? You die. It's sealing is only actually effective against immortals. It also has to actually pierce you to work, meaning you can avoid it. Who has avoided being hit by Susanoo? Hashirama, Ei, Gaara, Onoki, Mei, Danzo, etc. It can also possibly be stripped from Susanoo.
Yata: It's still just a shield that can only block one direction at a time, there are ways around it. Captain America's shield is indestructible too, but it doesn't make Captain America invincible. It can also possibly be stripped from Susanoo.
Genjutsu: It's something most high-level ninjas should be experienced in dealing with. It's not a rare ability, and if it were so powerful then Kurenai and Shii would be Kages, and Tayuya would had been leader of the Sound Five.
Also, Itachi is a Mary Sue-type character and things are often orchestrated specifically by Kishimoto just for Itachi to progress the story, and is given abilities designed specifically for that situation by Kishimoto. You've noticed that already with Izanami, but there are other instances too such as Koto Amatsukami, Totsuka, and even Susanoo. How Susanoo? Well Itachi's blind and dying, so he has a jutsu that creates a spectral warrior to fight FOR him... pretty convenient. Or Totsuka? Itachi needed a way that would stop the immortal Orochimaru, Itachi didn't have anything else that could stop Orochimaru permanently, and also needed to harmlessly remove Orochimaru from Sasuke... bam, Kishimoto gives Itachi Totsuka which can do both. Convenient.
All of Itachi's circumstances have always been convenient:
Orochimaru, 1st time? Orochimaru was dying, had no killing intent, wasn't as powerful as he would be later, and was just trying to take Itachi's body.
Kakashi? He proved to be a match for Itachi in skill, but then Kakashi ignored his own advice and thought it would be fun to have a staring contest with his Sharingan. Kakashi back then was below Kage-level anyway and most characters have beaten him. You're pretty much not a real threat unless you can.
Itachi also had help from Kisame against Kurenai, Asuma, and Kakashi.
Deidara? He was 9 or 10 years old, he was boxed in by Kisame and Sasori so he couldn't use his normal fighting style, and he had no intel on Itachi while Itachi had intel on him.
Nagato? Aside from being hit with a stupid stick, Itachi was magically able to see the invisible Yama and had significant help from Naruto and Bee. Itachi never actually fought Nagato directly and would had been screwed by CT without them.
Kabuto? Aside from Kabuto being watered down by not having any summons, Itachi needed Sasuke's help, couldn't had made it as far as he did without being an Edo, and had a LOT of luck.
