Your circadian rhythm has become aligned with your alarm schedule. Basically, your body has an internal clock that has been set to when you normally wake. If you were to randomly set your alarm an hour earlier or later, I'd guess you won't notice the same phenomena.

What hobby will work for you will really depend on your interests. Not knowing them, I can only make shots in the dark. Try cooking/baking. That's one of my favorite hobbies.
