Itachi never fought Obito, he had to observe his skills most likely out of battle (its possible he saw what he was doing at 13, but still we have no knowledge on how that night went down as far as obito). Minato on the other hand fought him head on and observed his skills a few times before he killed him. However, Itachi has no answer for Kamui, though I could imagine him tricking obito with explosive clones when he solidifies to use it.
