The thing with how Hashi did it was he used a wood clone when Madara had his Sharingan OFF. Now that he has infinite chakra, he never has to turn them off. Itachi used his eyes to trick people.

The only way for Itachi to beat Madara is if he collects all the dragon balls, wishes for immortality and then go into hiding until Madara dies of old age. Unless this is edo Madara in which case Itachi is ****ed.
