Here, Ino clearly states that there is a 100% chance of success.

Chapter 73, page 7.

However, Sakura was able to overcome Ino's jutsu. Ino then states that her mind-transfer jutsu has failed. This was made possible by her inner-self. Therefore, Sakura defied a 100% probability. Knowing that she has this special ability, her odds of winning mean less in a fight against Gaara.

She defied a 100% probability of that specific jutsu, her ability to defy those odds are not necessarily generalizable.
Very clever answer though.
