Tbh if Itachi was going to do this I think Kisame would join him, mainly because it's what Kisame is like and I think he'd enjoy taking down some of the top ninja with Itachi.

If it was Kisame and Itachi verse the akatsuki, Kisame would take on all the brute strength positions that Itachi cannot fill himself and Itachi is the most ultimate person to have as support. So together they I think they would take down the akatsuki.

Itachi by himself could probably take down a few of them but not all
