The race of saiyans lived on planet Vegeta
does that mean they are called vegetarians?

Saiyan is actually a perversion of the Japanese syllables in the word vegetable. Yasai is the Japanese word, so flip the syllables and you get saiya. The "n" is added to make it easier to pronounce.
