Also, the thing about Edo Tensei is that you don't need to kill them. Just deal enough damage to force the repair process, which immobilises them, and place the sealing tags for a quick win.

Ahhhhh ok. I still don't think he has a chance against Itachi.

I think Itachi is a tough fight for him because of his special tools, but I also struggle to see them putting someone of his level down

The question is whether all the tricks and hax of Itachi will,be enough to cover the level gap between him and Baki.

I figure that Itachi basically has to get the combo of his techniques right, since Baki can easily beat any single one with his physical skill and chakra techniques. The black flames are blown off by the Blade of Wind; the reflecting shield can't block much considering the multi-directional nature of the Blade of Wind, especially if it is spammed; the sealing sword needs to tag and could be blocked; the timeless illusions require eye contact; and even the summoned armour doesn't protect from all directions.

But getting Baki distracted enough by one technique will be difficult considering his superb judgement.
His leadership during an invasion of the strongest village basically puts him at the same level as tye vest leaders out there, especially considering that Kakashi was considered unworthy of even leading Konoha during a time of peace, when he'd be backed by the strongest combat force in the five lands.
His ability to perfectly balance a fight against a former associate of Minato such that he didn't kill him (and get jumped by the whole village in vengeance) while still maintaining a facade of being beatable (and therefore discouraging a call for back up) makes Akatsuki fights seem easy.
His ability to decipher high speed clone feints, as well as utilise chakra techniques while blocking a sword with his bare hands show a battle spirit only seen with legends.

So if he could do all that while trying to keep a low profile and not use fancy tricks, then trying to get the better of him when he is free to attack will certainly prove difficult.

Itachi got killed thrice, but Kabuto wasplaying around so he didn't seal him or use the talismans to force his actions.
Baki low diffed Hayate, who himself is especially talented in combat and as a kid had overall scores second only to Kakashi . . . (which implies that he is at least his equal in pure combat, but loses in other areas like espionage etc)

Kid Itachi, who at the age of 8 or 9 mastered the sharingan (3T) was fighting and beating Anbu...and made it look easy. Baki is a jonin mabey Anbu level...
Hed have a hard time fighting kid Itachi....let alone older mangekyo sharingan itachi is deff out of the question

You can't rate Itachi by feats as opposed to rank (genin) but for his opponent use rank instead of feats!

Your nitpicking...of coarse PART 1 genin Temari is weaker then her jonin sensei....she surpasses him in shippuden, (so does kankuro).
Maki is also jonin level...but ill give you that one. Naruto and sasuke were in the 4th ninja war...onoki does not beat them.
