Wouldn't this be plausible, when a woman is pregnant, her and the baby share a connection, both emotional and physical, so it should be possible for a pregnant Sakura to awaken a sharringan in a distressful situation, due to this connection she has with her unborn child.
When pregnant, the mother and babies chakra's seem to be one, (as Naruto had Kurama chakra from Kushina, and the seal can come undo because of the stress and Im assuming the severance of the chakra networks via the umbilical cord between mother and child.
(Also this theory (which isn't really a theory because its true) would explain why Sarada reserves are higher than Boruto's despite him being Uzumaki and Having Kurama chakra, because Sarada was probably feeding off of Sakura byakugou chakra, as babies can feed from seal chakra.)
So giving the connect between mother and child, Sakura probably could, or even did awaken the Sharringan when she was pregnant. I've found in most magical pregnancies, the mother tended to have access to the babies powers in various of TV shows, and Kishi gave us the logic to make it possible in Naruto.
