There was probably more wholesale interest in the Byakugan because there were more Byakugan readily available to take than there were Sharingan, given that Obito likely stole a bunch of Sharingan from the victims of the massacre.

Both dojutsu have their merits but the Sharingan has more utility and potential overall. So why is the Byakugan more sought after?

In case you hadn't noticed, her main abilities stem from the Rinnesharingan, which has nothing to do with the Byakugan.

Byakugan is better for gathering intel but the sharingan, and the uchiha vs hyuga in general, is better for actual fighting.
