Why not? It's as easy as not looking up too far. Guy seemed pretty confident in his ability to read his opponent's movements from their feet. If Itachi does win v. Gai (I'm in no place to actually say or analyze who wins that matchup atm) it won't be with genjutsu.

That's not how genjutsu works. It was stated and shown that Itachi had already woven the signs for a genjutsu when Naruto, Kakashi, Sakura and Chiyo encountered him. Itachi pointing was him releasing it.

Naruto wasn't caught in an ocular genjutsu.

Did you miss the change all its properties to block any attack part? Meaning if guy attacks from any direction, yata will adjust and block.

Oh and amaterasu can be used again, but it won't even get to that point.
