Why was Kakashi so surprised at Haku's seal speed when Minato could do the same?

And he was Kakashi's sensei, who fought in a war with him. Weird.

Just means Minato had the ability to do one-handed seals, but since he never lost an arm while alive, never needed to, so he never did, so Kakashi never saw it.

Its a retcon.
Just like Hiruzen's 5 elements.

Maybe Minato never did it in front of him.

You do realize that Minato's FTG did not exist when Kishi drew those pages? It's called a retcon

When the chapter came out, there were a few threads made on it. I don't really care, but it personally seems like a last minute addition to Minato for the sake of getting the Kyuubi out.

Pretty much this.

Maybe its because Minato had both of his arms before and never was in a situation where he needed to do one handed seals...

By retcon, I guess mean:

revise (an aspect of a fictional work) retrospectively, typically by introducing a piece of new information that imposes a different interpretation on previously described events.

"I think fans get more upset when characters act blatantly out of established type, or when things get retconned"

True, but why would you use 2 hands when you only need 1? If I could do 1 handed seals, I'd never bother using 2 hands to perform it ever again. It would be a total waste; you could use that hand to keep a guard up or eat a sandwich or something.

Well, Minatos fighting style revolved around using no seals or very little. Could be that while developing his fighting style of no seals, we went down the chain: First, needing two hands, then getting better and needing one, then completing his style of using none or very little.

You can see that Minato has to concentrate to make the seal with a single hand.

His eyes are closed, wich means he is imagining the seals in his head to be able to perform it

Because Haku was like fourteen, not thirty and could also do it with one hand. It's not a plot hole if that's what you're asking. Minato was just likely never forced to use one hand. He mostly used Rasengan and FTG in combat as well rather than normal jutsus that required seals.

Minato is 16 years Tsunade's junior, Tsunade is now 54 so she was 38 when Naruto was Born which would make Minato 22 at the time of his death. He was still a VERY young ninja, if you're implying his age was a factor. And, the way he performs it, makes it seems as though he's been doing it a while. Need I get the scan of Minato's genius hype?

Fair enough. That at least makes some sense.
