If you mean regarding those six, I'd give the best details and female characters to One Piece, but I agree otherwise. If you mean out of all anime, then not even close.

Best detailed story, I'd say Steins;Gate.
Best overall story, I'd say Fullmetal Alchemist.
Best art, I'd say Mushishi.
Best female characters, I'd say Ghost in the Shell (you just can't top the Major).
Best gore, I'd say Hellsing Ultimate.

Those are just out of those I've seen (I don't consider fanservice a good thing by any measure, unless it manages to hold some relevance to the plot).
