But that's exactly why we know it's a one-shot jutsu.

Everytime Amaterasu hits a major character, Kishi has to think of a way out of it for them; because otherwise, it would kill them in a single hit!

Basically, the fact that everytime a major character is hit by Amaterasu they get some way out of it, means that it is in fact a one hit, one kill jutsu, since Kishi doesn't want main characters dying off.

Itachi has to literally encounter and engage in multiple battles before those jutsu wear him down..

If you get hit you're gonna die, Nagato died, that samurai would have died but of course Kishi has to make up something, anything to give the jutsu a down fall. Raikage would have died. Sasuke would have died but he used orochi's jutsu.

Any "decent" sensor? Where do you get "decent" from? Obito has the power of the Sage, I doubt he's only a "decent" sensor.

Sking/chakra shedding, as well as chakra rods solos amaterasu. Besides it is not instantaneous and people who are adept in chakra sensing and have very fast speed will avoid it.

Umm no. Amaterasu takes time to prep up it isn't as instant as you think. If you are fast enough you can dodge it. It is a very powerful jutsu, but just because it is powerful doesn't make it impossible to dodge.
