Itachi never brought back Amaterasu against Sasuke or Orochimaru so far we know, but they knew about it, like he never brought it back on Shi(he never fought Shi so far we know), but he knew about it. Deidara and Itachi were partners in Akatsuki(not foreign like Shi or Sasuke), so he most likely knew his powers
