Over a decade ago is when I first watched Naruto and then watched Shippuden, but I left off around episode 21 and I haven't seen it since. I'm now planning to rewatch the series again from the beginning to continue where I left off.

Similar to Milkman's Dragon Ball Recut, I heard about Yellow-Flash's edits which cuts out the filler content from the episodes to make it closer to the manga.

I've also heard about another one called that also does this, but edits the episodes into a manga volume format.

Between Yellow-Flash's edits and Naruto Kai, what's the best one to watch?

Besides just filler or canon, it also differentiates between episodes that have some canon or some filler so you don't miss anything out. Whichever of the "versions" compares to that list, is accurate.

Though, I highly recommend to just switch to the manga once you're around Episodes 300-350. Generally I prefer Anime over Manga by a long margin but holy shit SP tried their best to make everyone go away after reaching the 300-ish mark.
