Conditions: Both are alive. Muu though his clones cannot go invisible or use fission. Itachi's sickness will not have him coughing up blood.

Since Itachi doesn't has legged Susano'o, using it would be the end of him. Mu erases Itachi along with Susano'o. Itachi is fast on his feet and quite good with weaponry. Mu's jinton requires some time to build up, with intel Itachi will press forward and get in the way of Mu's jutsu activasion or simply respond with Amaterasu. Than again with Mu's sensory he could figure Amaterasu's build up and get on defensive. This is a tough match for either party but I think Itachi wins more than he loses.

Depends on the opponent. Muu has slugglish reaction time. I don't see him dodging Amaterasu and even if he used his special clone, it will cut his power in half, basically turning him to fodder status

You don't think invisibility is a factor? Or a rock clone can block Itachi's line of sight. Not to mention that Mu is a skilled sensor and could react to Naruto's chakra arms.

Couldnt Muu just sense chakra build up in the eye and with full intel knows when his eye bleeds Amaterasu is coming?

By reacting you mean getting easilly tagged by a long range rasengan? You mean his deflecting light ability? Pretty sure Sharingan saw through light in the past. Sure he may block Itachi's line of sight with a rock clone, but what will he accomplish offensive-wise with that? And Magatamas would be enough to destroy the clones anyway. In the long run, it won't pay off

Itachi mid-high.

Muu can't hurt him because Dust Release leaves him vulnerable to Amaterasu.

Itachi will have to wait around a while until Muu puts himself in a situation that allows him to kill Muu.

Can YM block jinton?

However Mu's use of clones and his original fission can come quite in handy on having Itachi misfire

Itachi's Jutsu are short-mid range. He'll lose this fight purely due to fight style advantage

He was in the middle of using a move he was programmed to do. He had no control and couldn't move his body.

Actually, Mū's reaction time isn't sluggish at all, not when he evaded KCM Naruto's Rasentarengan at close range from his blind spot [Link 1]. Note that he stopped using jinton in order to dodge. In addition, he also casually dodged Gaara's sand from close range while the other kages got trapped, sensed Ōnoki from above prepping Jinton, and countered with a Jinton of his own even though Ōnoki had started prepping before he did. [Links 2 and 3]

Mind you, Mū's a skilled sensor, skilled enough to even discern the chakra types of hundreds, if not thousands of shinobi from a fair distance away [Links 4 and 5]. His high level of sensing only serves to augment his reflexes, which go hand in hand with reaction time.

What you used as your example doesn't prove that Mū has bad reactions at all. He simply wasn't expecting Naruto to use his chakra arm to propel Rasentarengan right at him from a short distance away, so he was fully focused on firing Jinton, which he noted to be the faster attack [Link 6]. Mū has to stay stationary while firing Jinton, so he couldn't have dodged in that circumstance because he didn't think he was going to get hit, as I explained.

Anyway, I personally don't believe the sharingan can see through Mū's invisibility. But if you want to argue him getting hit by amaterasu, the intel is full here, so he'll sense the buildup of his technique, see that his eye is bleeding, and proceed to fly away from his sight at a fairly fast pace, considering he should be as fast as Deidara is on his bird [Link 7]. If he gets hit, which is unlikely, he can just split himself and continue fighting. This is not even mentioning the Iwa bunshins which can be used as distractions.

I think it can go both ways depending on the situation but Full Arsenal Itachi would take this no prob.

Amaterasu is non factor don't see why people are talking like it's some game changer
Muu senses the built up for the technique and immediately goes invisible
Itachi can't ignite something he can't see so it gets countered fine
