Let's start with the juubi. He had a combo of rinnegan and sharingan. No byakugan. Which mean byakugan came from somewhere else. Enter sage. He was sealed with small amounts of yang and yin chakra from the juubi as a means of stopping it. Let's say 75% yang and 25% yin. That infused with his special blood and created byakugan, the first of its kind.
Its a blank slate because it doesn't have enough juubi yin chkra to create the sharingan but too much yang to create a perfectly balanced rinnegan.
Let me explain that latter statement. My theory is the sharingan tomoe are yin chakra with the juubi have the maximum amount.(9). Let's say that color is red so in this case the sharingan has 75% yin and 25% yang. The rinnegan is the perfect 50/50 mixture of yin and yang. Since yin is red color chakra and yang is blue it makes purple rinnegan chakra giving it the color.
Now the sage doesn't need rinnegan to beat juubi because jutsu don't work on it he just needs sealing jutsu which he has and sealing weapons which people often forget. The sage had the byakugan first then sealed the juubi and got its eye. But the rinnegan we know came to be after he suppressed the juubis overwhelming yin chskrs influence and did away with the tomoe. Thus the current rinnegan and perfect control of the yin Yang chakra came to be.
So all in all sage had byakugan from having more yang than yin from juubi chakra in his blood from birth which gave him increased insight into chakra but not genjutsu so he was able to understand ninjutsu and develop a taijutsu to counter it. Then he got sharinnegan but suppressed the juubi so he got rinnegan. The sharingan was passed down to his son who just had a watered down rinnegan but sharingan potential in his blood. That trickled down the first sons family where one got sharingan and was influenced by juubi yin and one was pure and had more yang than yin which led to the current byakugan in the hyuugas.
The youngest son didn't have a doujutsu because the sage used creation of all things to create his sons so there wouldn't be two potential deadly juubi possessed people with powerful eyes so he gave the younger son more stamina and strength to combat this.
Think of it like this. The byakugan has greatest insight so it cant come from a degraded sharingan or rinnegan. They had to be upgraded from it but lost some insight to gain more power. Think the whole ms downside in the sharing an. First there was just taijutsu and after sage got byakugan he discovered ninjustu. Rinnegan allowed this and is the perfect ninjutsu doujutsu. The rinnegan downgraded into the sharingan which because of juubi yin specializes in genjutsu which only the juubi knew before the sage. However, the sharingan can upgrade into the rinnegan by equalling out the yin yang chakra. Thus senju DNA. But it can't go back to byakugan because the bloods not pure and is nfluenced by juubis chakra unlike the hyuugas.
