Putting Tsukasa aside, this all just felt retconned and weird.

Turning mediocre and basic ingredients into high-class dishes is Soma's specialty and he has been doing it from the start of the series, yet somehow he doesn't understand the "true" nature of the assignment? And even goes as far as losing money?

This is absurd. Every since the beginning of this arc, Soma has been tossed around like a 2nd rate chef.
